Cassava flour is minimally processed (no starch extraction) retaining dietary fiber, while tapioca starch is the pure extracted starch with 85%+ starch content.</p><p>Cassava flour and tapioca starch are used in gluten-free bread and crackers, noodle and vermicelli production, industrial adhesives, paper sizing, and biodegradable packaging. Popular as a wheat flour substitute in gluten-free formulations and as a thickener in soups and sauces.</p>
